How do I prepare this Feta Cheese and Dill loaf?
This aromatic savoury Feta Cheese and Dill loaf is very easy to make and is ready in under one hour! Start by gathering all your ingredients and preheating the oven to 180C or 350F. Grease a loaf tin and set it aside. Wash the dill under running water and chop finely. Sift the flour and add the baking powder. Grate the cheese and break the feta cheese up into small pieces. I do that using a fork, however you can also dice the block of feta if you prefer larger chunks. Next, in a large bowl, whisk the eggs for approximately 5 minutes until they are fluffy. Add milk to the eggs and mix. Continue by adding the flour and baking powder in small increments and whisk. Lastly, add sunflower oil, feta cheese, grated cheese, dill, salt and mix. Pour the mixture in a greased tin and bake at 180C or 350F for 40 minutes. Cover the loaf with aluminium foil at half hour to avoid over browning.
What other herbs can I use?
You can experiment as you like when preparing this aromatic savoury loaf. I have used dill in my recipe, however you can substitute dill with either parsley or mint. Dill has a fresh citrusy flavour, parsley has an earthy taste. Parsley is actually a perfect substitute for dill and vice versa. Another aromatic herb you can use is mint. All of the above spices have a powerful taste so add them in small amounts to the loaf. I would also recommend you use either one of them and not all of them at once.
